Gluten Free Mediterranean Risotto


 
 
 
 
 
 
 
 

Mediterranean Risotto
Serves 4
*2 cups white rice

*Diced carrot, zucchini, mushrooms and any other vegetable you are fond of.

*Gluten free vegetable stock (I used Vegetta)

*Fresh basil

*Garlic infused olive oil


1.       Heat oil in heavy based sauce pan. Fill kettle and boil. Cook the vegetables for about 7 minutes and add rice, stirring for one minute. Add 1-2 heaped teaspoon of the stock then pour in boiled water from kettle until it covers the rice. Give a good stir for a couple of minutes.

2.       Now you leave the risotto to simmer on medium-low heat while you clean up the kitchen or make something yummy for desert. Don’t forget to keep an eye on it or it will dry up! I check mine every five minutes and give a good stir. Keep adding more water from kettle as needed until rice is tender and creamy looking. It usually takes me about 20-30 minutes.

3.       Pile into cute bowls and top with fresh herbs.

*You can use any fresh or dried herbs that you like. Actually no, I demand that you use what I use! Just kidding…

Glimmer and Doilies


Here are some of the latest cards I have made now. I've got a rather large stash that is growing alarming fast!

These ones hold the glitz and glamour of The Great Gatsby era. I love the rich purple tones with the bright sliver.

I am rather fond of doilies at the moment. These are just paper ones, perfect for card making as they do not weigh the card down. The combination of pastel pink, green and blue with white creates a lovey spring feeling. One month to go then hello spring time!



 

Gluten Free Tomato and Zucchini Pasta

Ingredients:

·         1 can tomatoes

·         2 zucchini, diced

·         I red capsicum, diced

·         Handful of mushrooms, sliced & olives

·         Garlic

·         Olive oil

·         Gluten free pasta

Method:

1.       Heat oil in frying pan, fry garlic for a couple of minutes. Add the zucchini and mushrooms and cook on medium heat for about five to seven minutes.

2.       Add the can of tomatoes and olives and reduce heat to low. Simmer for about 20 minutes. Cook pasta according to packet directions. Drain the pasta and toss through the sauce. Serve with fresh herbs (basil goes well with tomato) on top. Enjoy!

Little Golden Books



I love collecting things. And I prefer to be referred to as a collector, not a hoarder! I began collecting Little Golden Books about a year ago. I thought the pages would come in handy in my scrapbooking projects. I made this layout for my bedside table using pages from The Lion King, along with vintage style memorabilia from my rather large scrapbooking stash. “Fabric of My Life”


As you know I have a love affair with anything crafty and vintage. So when I saw the Needle and Thread range from Kaisercraft I fell in love. I made this little layout to fit inside this photo frame on my bedside table.

Whatever Will I Wear?


I often receive compliments on my individual and vintage fashion style. However it did take me awhile to find and develop my own unique style. I grew up in the suburbs near the coast and started taking an interest in fashion when I was around 14 or 15 years old. Being close to the beach surf brands were "in" such as Ripcurl and Roxy. My friends usually wore board shorts and bright t-shirts in summer with coloured thongs. Winter was jeans, jumpers and jackets simple in colour and design.

 

After following this trend for about a year or so I became board and tired of looking like everyone else my age. So I decided to try wearing more dressy clothing. My wardrobe changed to floral knee length summery skirts with camisoles in summer. In winter I wore dresses in solid colours with tights and boots. I further developed this style during my undergraduate years at Uni. I left home and lived on campus at La Trobe University, about an hour out of Melbourne. I enjoyed dressing up each day instead of waring a school uniform. Hats, scarfs and gloves were much needed in the chilly Melbourne winters.

 

I would describe my summer style as 1950's and 1970's. I wear a lot of floral and print knee length dresses and skirts and flowing maxi dresses and skirts. Summer fashion is very romantic, I think.





This lovely blue dress here is one you can get away with wearing all year round. In winter I team it with black (or red!) tights, boots and a bright blue blazer. I love the combination of blue and red together so I accessorise with a red belt and blue and red jewellery (think ropes of pearls and crystals).

 

I am a big fan of tweed. I proudly own a vintage (1970’s I think) tweed caramel coloured high waisted skirt. This cute dress is imitation tweed. It has a lovely purple and pink colour through it.


 

This yellow dress here is one of my favourites. I picked it up from a fantastic shop in Adelaide called Dangerfield. When I entered this shop I thought, Oh my goodness! Look at all these lovely clothes! Dangerfield is full of vintage style clothes ranging from the ‘50’s through to the ‘70’s, including Goth and punk style. I love how this dress is modest, as in it covers everything, yet still carries a classy sexy look.

I'm back! And other things...

Hello! After another long absence I'm back again with new ideas. I've decided to add other content to my blog, such as more vintage items, home deco, fashion and food! The food part will centre around recipes   I've collected over the years since I've been on a gluten, dairy and egg free diet due to health issues. I've always found it difficult to find yummy and most importantly easy allergy recipes. So stay tuned!
